That wound may be real and the fish may be real but I don’t think that that particular fish bit off his finger.

Sorry, I don't believe any of it.

The fish looks too small, and parrot fish have mouth parts designed to break off and crush coral. They're not sharks. They have the wrong mouth setup for cleanly slicing off body parts.

As for the injury, an obvious Photoshop job, in my opinion.

People who make this nonsense get off on fooling people, which I don't understand. Where's the challenge? Fooling people is childishly easy.
