2. What size fish can we expect in terms of pound line we should be using? My harbor set ups are spooled with 6 and 8 pound line hopefully that is enough.

I don't know about a tricky launch area? Where did you read that? LOL! You best be calling me to go on your charter boat and stay in your hotel! As for set ups, I know bayfishingjunkie fishes some different # class and likes the heavier line I think. I always have fished 6 and 8LB Only in the bay. A quality 6LB line like PLINE CXX and you are set to go! Once in a while I will fish 8LB. Never have I fished any higher than 8LB when I am bass fishing in the bay. Hope this helps!
